Tête de Moine


The "Monk's Head" is most likely named for the method of serving. This cheese is most often served in shaved florets made with a girolle, that mimics the shaving of a monk's tonsure. The delicate texture found when shaved perfectly delivers the rich creaminess and slight earthy funk of this washed rind cheese.
