Made from Gloucester breed cattle and local "Stinking Bishop" Perry, this cheese is a product of its environment. The cattle produce a rich milk that creates a buttery and velvety texture the carries the light funk and residual Perry flavor throughout the body of the cheese. While the Perry washes do cause it to be a rather aromatic cheese, the flavor is not nearly so agressive.
