A cheese that certainly lives up to its name, Brazos Valley Smoked Gouda is smoked over pecan shells and aged two to six months up at their cheese cave in Waco. That aging leaves it slightly springy and almost cheddar-like in texture; perfect for melting. The flavor is somewhat sharp, but the smokiness is what sets it apart as it overcomes the flavor the closer you get to the rind.
