This cheese excellently showcases the flavor sheep's milk imparts on a cheese. The brittle exterior rind adds just a hint of mushroom to the nutty and earthy interior signature to sheep's milk. Light in texture, and slightly dryer than a typical soft-ripened cheese while still remaining spreadable, this cheese is an exciting departure from the everyday while still remaining accessible.
