An American interpretation of the classic French Vacherin style, this spruce wrapped bloomy rind is perfect for groups. The silky interior is soft at room temperature, and has a rich milk flavor with slight tangy notes and present woodsy character that comes off the cheese's wrap. While one recommended way of serving is to slice off the top rind and scoop out the interior with a cracker, there are many different forms and functions this fantastic cheese can fill.
