This cheese has all the characteristics of a great Gouda; a little bit of sharpness, a slight caramel sweetness, and a bold flavor with hints of whiskey. That being said, this is far from your everyday Gouda. The sheep milk in this cheese grants it a classic sheepy nuttiness and earthiness that works perfectly with the traditional Gouda flavor profile to make something exciting, different, and unabashedly sheepy. The 9-12 month aging is enough to start seeing some crystallization without causing the cheese to lose any of its creaminess.
