Jean Athelme Brillat-Savarin wrote that "Dessert without cheese is like a beautiful woman missing an eye". The cheese that bears the Gourmet's name excellently fills the role of a dessert cheese, but has plenty of other applications. The Protected Geographical Indication on this cheese requires it be made in Burgundy and be a triple cream. This leads to an incredible rich and buttery cheese that melts in the mouth at room temperature. The flavor is very mild, with just a hint of tartness coming from the rind.
