This blue is a perfect example of a traditional English Blue. The flavor is reminiscent of Stilton with strong blue sharpness and a slight almost metallic note on the end, but this cheese leans a bit more into the earthy end of that spectrum, and ends up tasting very much like a blue English cheddar. This is visually indicated by the use of annatto in the cheese, making it distinctive to both the eye and palate.
